Homestyle Cookin' | Gabby's Lazy Enchiladas

I meant Gabby almost 4 years ago right before I got pregnant with my son. Of all places, I met her on the internet through an online pregnancy forum. We were both in the process of trying to conceive our first little ones! Over the years, Gabby and I have kept in touch through facebook (thank God for facebook!). 

The other evening, Gabby posted a yummy photo of her dinner, Lazy Enchiladas, and I just knew I had to get the recipe from her!

Here is a horrible picture of how mine turned out this evening, followed with the recipe (along with some tweaks I made).

Gabby’s Lazy Enchiladas

1lb ground beef OR 4-5 chicken breasts
Tortillas (corn or flour, I use flour)
2 cans enchilada sauce
Freshly grated mild cheddar cheese
Salt & Peper to taste
Onion Powder

1 carton chicken broth (if using chicken)
1 can Rotel tomatoes and chili’s (optional)
1 can (no bean) chili (optional)
Sour Cream (to top with, optional)

Brown beef, drain, return to pan.OR,
Boil chicken breasts in pan with water and one carton of chicken stock.
Shred and return to pan.

*I added a small amount of Rotel liquid to the water while boiling my chicken.*

Add 1tbsp onion powder, salt and pepper to meat (more or less, to taste).
Add 2 cans of enchilada sauce to meat and simmer for 2 minutes.
*I added ¼ can of Rotel to chicken mixture. You can add more or less, or none at all. You can also add a can of chili, but I have not yet made it with chili*

Cut tortillas into one inch strips. You will most likely use 6-10 tortillas, depending on the size and thickness.

Grease a 13x9inch pan. Place 1 layer of tortilla strips in pan. Add half of meat mixture, top with cheese. Repeat 1-2 times.Top with cheese.

Bake @ 350 for 25-30 mins.
